Nutty Lamb Meatballs & Mint Yoghurt Sauce

This dish is very tasty indeed, they taste better than they look in the photos! I’ve made these spicy (but not too hot) meatballs a few times and they’re always a winner. Nuts are actually really good in meatballs, sounds weird, but it really works- just try it! I saw Lee Holmes put nuts in her meatball recipe, and this recipe developed from there. The mint yoghurt sauce is a new addition but it goes well. I served mine with courgette spaghetti. My brother made tomatoey beef meatballs when we visited him in Oz a few weeks ago and served them with courgette spaghetti so I have blatantly copied him on that part! He made them after our first day in Oz when he brought us to Balmoral Beach and we passed out comatose from jet lag… not quite what he had planned for the day!

This dish saw me invest in a mandolin for slicing, and I am happy to report I didn’t lose any fingertips in the making of this meal! This is very healthy and very very tasty. I made it for a friend this week and she really liked it, despite its not so glamorous appearance. This one is a good one, definitely give it a go. I made loads of extra meatballs and froze some for when I’m feeling lazy.


Nutty Meatballs and Mint Yoghurt Sauce

Ingredients (serves 4):

500g minced lamb

1 egg

Handful chopped walnuts

Handful sliced/flaked almonds

2 small finely sliced onions

3 cloves of crushed garlic

2 tsp ground cumin

2 tsp garam masala

1 tsp nutmeg

1/2 tsp chilli powder

salt & pepper

Half a cup of Greek Yoghurt (I love Glenisk the best)

A big sprig of fresh mint

Juice of half a lime

2 courgettes sliced finely length ways (a mandolin is great for doing this quickly)

 

1. Lightly saute the garlic and onions and then take off the heat.

2. Mix spices, nuts, mince, egg, garlic and onion. Mix well.

3. Form into meatballs shapes. Try to keep them all the same size so they all cook at the same time.

4. When done put in a preheated oven  at 150C for a few mins while you cook the courgette.

5. Chuck the  courgette in a pan with some olive oil and salt and pepper, this will only take second to cook. You don’t want soggy, limp courgette.

6. Chop mint, add lime juice and yoghurt, give a stir.

7. Serve meatballs on top of courgette spaghetti with a generous dollop of your yoghurt sauce

Ah Chilli Con Carne, one of those quick and simple dishes that’s super comforting and super healthy to boot. Still on a health kick from Australia (those Aussies would put us to shame) I have decided to post this one as I made this two weeks ago when staying with my brother in Sydney. We enjoyed it after a day out exploring Sydney, one of the highlights of which was chilling in the Sydney Botanical Garden.

It’s a handy dish to throw in the freezer and defrost for a quick after work meal. It’s really nutritious too. This recipe is a twist on one of Teresa Cutter’s, The Healthy Chef (I’m really loving her blog). Her blog is packed of really delicious meals that are really healthy and nutritious. Chilli Con Carne is one of those ones you don’t really need a recipe for as you can add or leave out whatever veggies you want, but I liked how she put avocado on her’s, I thought it was a really nice addition. I put an extra chilli in mine, as I wanted a little extra kick. I also added in some molasses and cocoa for depth of flavour. Enjoy!

Ingredients

1 onion, finely diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 large grated carrot

2 sticks sliced celery

250 g lean beef mince

1 red pepper, chopped

2 tablespoons tomato paste

1 tbsp molasses

1 heaped tbsp cocoa

400 g tin of chopped tomatoes

400 g tin of cooked red kidney beans

125 g cherry tomato, halved

100 g baby spinach leaves

1 avocado, chopped

1 bunch coriander, chopped

1 lime

2 Chopped red chilli (one for the sauce, and one to garnish.. or more if you like it hot)

  1. Sauté the onion, carrot and celery for 3 minutes until softened.
  2. Add the spices and mince and cook through for 5 minutes until the mince is browned.
  3. Add the red pepper, 1 chopped red chilli, tomato paste, molasses, cocoa, tin of chopped tomatoes and beans.
  4. Pour over 2 cups of water.
  5. Simmer over a low – medium heat for 30 minutes until thick.
  6. Season with ground pepper and a little salt and add cherry tomato.
  7. Fold in spinach and coriander just before serving.
  8. Spoon into bowls,  top with chilli to taste, avocado and a squeeze of lime.
  9. Enjoy by itself or with a side of steamed green vegetables, brown rice or quinoa.

Ah my first recipe from Sydney! It’s been a long time coming but I have been travelling a lot without internet access, but I guarantee it’s worth the wait! My brother introduced me to a blog called The Healthy Chef by Teresa Cutter who has a really nice range of yummy but super healthy recipes. I think it is fitting for my Oz blog as those beautiful Australians are so fit and health conscious, and brunch is my favourite meal time.

This recipe is a great at weekends especially for a bit of a trek. Last weekend we did the coastal walk from Coogee Beach to Bondi Beach in Sydney, and this was the perfect fuel. So here is Australian Chef, Teresa Cutter’s Banana Stuffed French Toast! And best of all it is the easiest recipe ever. You really really have to try this one!

Serves one:

2 slices wholemeal sourdough spelt bread ( nutty seedy ones are the best)

1 teaspoon  almond butter (good quality peanut butter will do too)

Handful blueberries

2 tablespoons ricotta

1 banana, mashed

Pinch cinnamon

nutmeg

a drizzle of honey

1 organic / free range egg

40 ml milk (dairy, coconut, almond, soy)

1/4 teaspoon vanilla bean paste

A sprinkling of flaked almonds

 

1. Spread one side of the bread with almond butter and the other side with ricotta cheese.
2. Top the almond butter side with  mashed banana and some blueberries.
3. Sandwich together firmly.
4. Beat egg, milk, cinnamon, nutmeg & vanilla.
5. Dip sandwich in the egg wash and allow the bread to soak it up.
6. Cook over a low – medium heat on both sides until Golden, crisp and heated through.

Pop them in an oven at 100C to keep warm while cooking the rest. Serve with a drizzle of honey and flaked almonds, and leftover blueberries.

This is the last recipe I will share from my week in Thailand, but I really loved it. Tom Yam Ghoong soup is delicious, and a nice exotic soup for the winter months! It’s traditionally served clear, but this variation makes it creamy.

It’s packed with flavour and spice, if you made it with a few extra prawns and some flat bread you could make a meal of it! It’s easy too. It seems most Thai cooking takes only minutes, it’s the preparation (chopping, crushing etc) that takes time, however if you have a mandolin for quick slicing, all these meals can be made in minutes!

We spent an afternoon diving in Koh Chang and left from a village called Bang Bao. It’s an amazing fishing village where all the shops and restaurants are on stilts like a long wooden pier. We went for dinner there after diving and had squid which had just come in from a fishing boat 20 minutes before we ordered it… Amazing! This prawn soup would be a typical dish on the restaurant menus here also.

Ingredients:

100g fresh prawns

1/3 cup mushrooms halved

1/3 cup tomato sliced

2 red chillies, lightly crushed

5 sliced galangal (if you can’t find this in your local asian shop, just leave it out)

1 stem lemongrass crushed

2-3 bulbs shallots crushed

2-3 kaffir lime leaves/bergamot torn

1 coriander roots crushed (use the leaves as a garnish on top)

2-3 tsp fish sauce

2-3 tsp lime juice

1/2 tsp salt

1 tsp red chilli paste

2 tbsp cows milk

3 cups fish/chicken stock

 

1. Boil the stock over a medium heat

2. Add herbs (lemongrass, galangal, kaffir lime leaves, coriander, shallot & chillies) until fragrant.

3. Add vegetables (tomato & mushroom) and cook until soft

4. Add fresh prawns and cook until done add salt

5. Turn off the heat and seasoning with lime juice, fish sauce, chilli paste and milk. Garnish with coriander leaves

Another great recipe I was taught during my cookery course at the Koh Chang Thai Cookery School was Fried Spring Rolls! So tasty and a total crowd pleaser which is great for parties! This recipe unlike the last one doesn’t require as many herbs and less pounding etc. While I list the ingredients we used, you are free to put in or leave out what vegetables or meat you want. The chilli dipping sauce that goes with it is a great 0ne to know for parties, great with prawn crackers etc and it’s easy peasy to throw together. The pastry sheets for the spring rolls can be found in most Asian shops in the freezer. Apparently many Thai people use the same method with chopped pineapple, mango and banana instead of meat and veg for a dessert.

We would pass stall upon stall of amazing street food in Thailand each day. A bowl of Pad Thai would usually cost between 50c to €1 and would taste amazing, which was often our lunch. All the street food was amazing though, we would go to the fruit stalls for breakfast, coconut ice-cream stalls for a refreshing treat or any of the other stalls for a tasty snack such as these very spring rolls!

Serves 4 people (8 large spring rolls)

 

Chilli Sauce:

1/2 tbsp crushed red chilli

1 tbsp crushed garlic

1 tsp salt

1/3 cup sugar

1/4 cup vinegar (white wine vinegar)

1/4 cup water

 

Ingredients:

500g spring roll sheets

100g mung bean noodle

200g minced pork or chicken

1/2 cup shredded cabbage

1/2 cup shredded carrot

1/2 cup chopped babycorn

1/2 cup chopped spring onion

1/2 cup beansprouts

1/3 cup mushroom finely sliced

1 tbsp chopped garlic

1 tsp sugar

2 tbsp light soya sauce (Chinese soya sauce in better than japanese soya sauce for this)

2 cups cooking oil (vegetable, sunflower, peanut etc… not olive or sesame oil which have a strong taste)

 

1. For chilli sauce bring vinegar, sugar, salt, garlic, chillies, water in the pot and cook over the low heat until everything has melted together and thickened. Set aside. (This will keep for a month in the fridge)

2. Heat 2-3 tbsp oil in the wok/deep pan, add garlic until fragrant, add minced meat, vegetables, mung bean noodle and cook until soft, season with 3-4 tbsp soya sauce.

3. Spread the spring roll sheet with one corner facing you, place a spoon of ingredients in the corner and roll the sheet away from you until you get half way through, then tuck the side corners in, and place a little egg wash (beaten egg) on the corner opposite you and roll it up.

4. Heat the oil over a medium heat until hot, dip the rolls in gently (maybe with a spatula to protect oil splashing and burning you) and let cook until golden brown, turning once. Remove and drain on absorbent paper.

5. Serve with chilli sauce.

So for the last week I have been traveling around Thailand and I am now finally in my brother’s place in Sydney with access to a laptop and so can share my new recipes. While in Thailand I visited an amazing place called Koh Chang where amongst trekking through jungles, scuba diving and meeting elephants, I did an amazing afternoon cookery course which gave me a nice little repetoir of delicious recipes that I had been eating all week.
My favourite was probably the Panang Curry as I love nutty flavours. It’s like a red curry with nuts ground in to the curry paste. It is the most delicious curry you will eat! We made the curry paste from scratch so it’s probably a good weekend recipe, but the curry paste lasts for a month if you cover it in a little oil and store in an airtight container, so  you can make again a few times with ease! If it looks like too much ingredients, you could always buy red curry paste and add the ground roasted peanuts. Also some ingredients may be hard to find at home so don’t stress too much if you have to drop and ingredient or two!

 

Ingredients (serves 4):

Curry Paste:

1 tsp cumin seeds

1 tsp coriander seeds

2-3 cardamon seeds (1/4 tsp powder)

1 inch cinnamon (1/4 tsp powder)

1 piece nutmeg (1/4 tsp powder)

1 piece of mace (1/4 tsp powder)

1 tbsp roasted peanuts

 

Other herbs:

2 dried red chillies

1/2 tsp salt

1/2 tsp chopped galangal (you can get this in asian shops)

2 tsp sliced fresh lemongrass

1 chopped coriander root

1 tsp chopped skin lime kaffir fruit

2 tbsp chopped shallots

5 cloves garlic

1 tsp shrimp paste

 

Curry:

10g chicken breast chopped

1/4 cup aubergine

long green beans

1 onion chopped

Handful babycorn sliced diagonally

1/2 cup coc0nut cream

3 cups coconut milk

1 tsp c0conut sugar

1 1/2 tsp fish sauce

1/4 cup sweet basil

2-3 kaffir lime leaves

 

1. Pound all curry paste ingredients together in pestle and mortar, add in other herbs and pound.

2. Heat 1/2 cup coconut cream and add 1 1/2 tbsp red curry paste, stir until fragrant and add torn kaffir lime leaves.

3. Add chicken and cook until done, add more coconut milk if curry looks dry.

4.  Add aubergine, green beans, babycorn mix well and add coconut milk slowly. Cook until soft.

5. Season with coconut sugar and fish sauce.

6. Serve with sweet basil, sliced kaffir lime leaves, sliced chilli & a drizzle of coconut cream on top.

I’m currently travelling around Thailand / Australia so I didn’t see it until now! Thanks to Aoife McElwain for mentioning it!

When I land in Australia tomorrow I will put up a blog recipe for Panang Curry! I did a cookery course in Koh Chang, Thailand and so have a few traditional Thai recipes up my sleeve! And they’re yum!
